They are everywhere here right now. And cheap. Also delicious. I have just never cooked with them. Anyone have any hatch recipe suggestions? I am browsing around the internet and I'll update the efforts, but I figured I'd ask. Plus, the food and health category is underused. :)

oh my goodness!!!!

i is from nm, land of the hatch chile.
we would roast and peel bushels of them until our hands swelled up mighty.

i do not have time to post all night, so i'll just say roast and peel a bunch of them and put them on and in everything you cook/eat. yes. that's the recipe for authentic nm cooking.

How do I roast them? Just under the broiler in the oven?

yes, that will do. let them blister (turn as needed), then you can put them in a paper bag to steam out and make peeling them easier.
